CHICKEN SCHNITZEL

The perfect at home pub meal



I always cook this meal when my partner wants to watch the footy and drink beer. The crispy chicken schnitzel pairs perfectly with salad, chips, gravy and a wedge of lemon.

This is my favourite at home pub meal – Simone Laws

INGREDIENTS

  • 500 GRAMS CHICKEN BREAST (4 CHICKEN BREAST)

  • 1 CUP FLOUR

  • 1 CUP BREAD CRUMBS (PANKO BREAD CRUMBS WORK BEST)

  • 2 EGGS

  • 1 TBSP OREGANO

  • 1 TBSP PAPRIKA

  • 1 TBSP CRUSHED GARLIC

  • 1 TBSP CAJUN SEASONING

  • VEGTABLE OIL (FOR FRYING)

METHOD

  1. Slice the chicken breast into fillets and tenderize them gently.

  2. In a bowl, mix together the flour, dried oregano, paprika, crushed garlic, and Cajun seasoning until well combined.

  3. In another bowl, whisk the eggs.

  4. Coat each chicken fillet with the seasoned flour mixture.

  5. Dip the flour-coated chicken fillets into the whisked eggs.

  6. Then, coat the chicken fillets in the panko breadcrumbs, ensuring they are evenly coated. Repeat this process for each chicken fillet.

  7. Heat a large pan with vegetable oil, ensuring the oil is approximately 2-4 cm deep.

  8. Once the oil is hot, carefully add the coated chicken fillets to the pan.

  9. Fry the chicken fillets on each side for about 5 minutes or until they are golden brown and crispy.

  10. Once cooked, transfer the chicken fillets to a paper towel-lined plate to drain any excess oil. Allow them to rest for about 5 minutes before serving.

  11. Serve the crispy Cajun chicken fillets hot with your favorite dipping sauce or alongside a fresh salad for a delicious meal. Enjoy!
