FETA PASTA

The famous Tik Tok pasta - Quick and easy


I saw this recipe on Tik Tok and just knew I had to try it. I love this recipe because its quick, easy and cost effective - my favourite kind of recipe.

INGREDIENTS

  • 500G CHICKEN BREAST

  • 300G CHERRY TOMATOES

  • 200G FETA 120G BABY SPINACH

  • 500G PENNE PASTA

  • 2 TSP PAPRIKA

  • 2 TSP OREGANO

  • 2 TSP DRIED BASIL

  • 1 TBSP CRUSHED GARLIC

  • 1 TBSP VEGETABLE OIL

METHOD

Preheat the Oven:

  • Preheat the oven to 200 degrees Celsius on a fan-forced setting.

Prepare Chicken and Baking Tray:

  • Cut the chicken breast into small pieces (1cm x 1cm) and brown them off in a pan with vegetable oil.

  • In a medium-sized baking tray, place the block of feta cheese in the center and surround it with the cherry tomatoes.

  • Drizzle some olive oil over the feta and tomatoes.

  • Mince the garlic and sprinkle it over the feta and tomatoes. Also, sprinkle paprika, oregano, and dried basil over the ingredients.

Bake:

  • Add the browned chicken pieces to the baking tray and cover the tray with aluminium foil.

  • Bake in the preheated oven for 35 minutes.

Cook Pasta:

  • While the chicken and tomatoes are baking, boil a pot of water and cook the penne pasta according to the package instructions. Remember to save 1/4 cup of pasta water before draining the pasta.

Finish Baking:

  • After 35 minutes, remove the aluminium foil from the baking tray.

  • Add the baby spinach to the baking tray and return it to the oven, uncovered, for an additional 10 minutes to allow the spinach to wilt.

Assemble:

  • Once everything is cooked, remove the baking tray from the oven.

  • Add the cooked penne pasta to the baking tray along with the 1/4 cup of reserved pasta water.

  • Mix everything together thoroughly until the pasta is well coated with the sauce and ingredients.

Serve:

  • Serve the Chicken, Feta, and Tomato Pasta Bake hot, garnished with some fresh basil leaves if desired.
